Methods of addition: For O/W emulsions lecithin is generally more effective when added to the oil phase. For O/W emulsion, lecithin must be added to the oil phase since the lecithin's which promote W/O emulsion are not water dispersible. In all cases the lecithin should be throughly dispersed to achive the best results. Heating to approximately 120OoF can enhance handling & mixing characteristics of the more viscos lecithins.
